Epic Baked Potato

I called this an epic baked potato because that’s what it felt like when I was eating it.  Every mouthful was a flavour and texture explosion.  I can’t remember the last time I ate a baked potato, and I’m not gonna lie it added a nice little twist of nostalgia to an already delicious meal.  Ok, so it wasn’t the healthiest meal but it was cheap and quick and filling and that’s enough for me :).

equipment

a microwave (or oven)
a chopping board
a sharp knife

ingredients

one large potato
one chorizo sausage (optional)
1/2 cup of black beans
1/4 c of grated cheese
2 cloves garlic
half a jalapeno (or any chili)

method

Prick your potato as many times as you can be bothered and put it in the microwave for 10 minutes (turn it once if you remember).

While it cooks chop up your chorizo if you’re using some.  Finely chop the jalapeno and garlic.

Heat up your black beans with the garlic for a couple of minutes.

When your potato is cooked cut a cross in the middle and pull out while squeezing in at the same time (it sounds confusing but you’ll know how to do it).  Fill the centre with the chorizo and beans.

Sprinkle some cheese on top and put it back in the microwave for 30 seconds until it melts.

Top with the jalapeno and eat!

I served it alongside half an avocado to make myself feel better for all the cheese I added ha. 🙂
