I should just say that I don’t normally make salads in large pots ha! But there were no large bowels or platters in the hostel we were staying in so I had to make do with this. I actually kinda liked it.
This salad was so good I wanted to make it again the next day. Guy is not a fan of fruit in salads (weirdo I know!) but even he admitted that this was good. Aaaand it’s so pretty, it makes you feel happy eating such a rainbow. Once again it is the perfect hostel meal to make – easy, cheap and healthy. 🙂
Also if you’ve never massaged kale before I can’t recommend it highly enough. It completely changes the taste and texture of the leaf and also gives it a whole bunch of flavour. Massage is probably a bit of a gentle term. You literally just add a little oil and scrunch it between your hands for a minute or so until it softens.
a large bowl (or pot)
a chopping board
a sharp knife
a frying pan
a large bunch of kale (roughly half of one of those prepackaged bags)
a handful of strawberries
1 chicken breast
1 large lime (or 2 small ones)
3 T oil
1 T honey*
Put 1 T of oil, half the juice of a lime and the honey into a bowl. Give a little stir to dissolve the honey. Slice the chicken and allow to marinate for a few minutes.
Massage the kale with 1 T of oil and the rest of the lime juice.
Slice the strawberries in half, and cube the avocado. Toss gently through the kale.
Cook the chicken in the remaining oil – be careful it’ll stick a little with the honey.
Add the chicken, toss one more time and serve!
We just had this with some tortillas but if I was making it for dinner I’d have it alongside a baked potato or some rice.
*I buy honey rather than sugar when I’m in a new place. I just find its more versatile. I use it in my coffee, marinades and dressings and it tastes even better.
