two ingredient banana pancakes

This is quite possibly the easiest pancake recipe in the world, which makes it perfect to whip up in a hostel kitchen (or in our case an airbnb cocina).  There are a few things you should know about these pancakes – they are super easy, and super quick, super healthy and quite honestly delicious. We have these for breakfast a couple of times a week, and on the weekend we’ll splash out on a side of bacon and have a second coffee.

Serves 2 (just double/triple for more people)

equipment needed

two frying pans (preferably with a lid, but if not just use some foil)
one mixing bowl
a sharp knife


2 ripe bananas
4 eggs
1 T oil
optional (a spoon of flour to help bind – just makes them easier to flip)
optional (nuts, raisins, flaxseed, chia seeds, blueberries…)


Mash the banana in a bowl until its smooth.  Break in two eggs and stir really well until it’s all combined (15 – 20 seconds).  Stir in the flour and any other ingredients your using.

Heat a little oil in a frying pan over medium heat and pour the mixture in.  You can make one large one or a couple of smaller ones. Cover with a lid and leave for a couple of minutes.  If you don’t have a lid put some tin foil over the top – or just turn the heat down to low to give the mixture a chance to cook without burning.

Flip, cook for another minute and then serve.

I like to eat this with a little peanut butter spread on top, Guy prefers it with maple syrup, but most of the time we’ll just have them with some cut up banana on top. They’re delicious just on their own too.
